Responsible for the administration and direction of the Steward’s department including personnel, budget/forecast and maintenance of equipment. Develops, recommends and implements policies, procedures and training practices for efficient operation. In charge of Stewarding department, shift supervisors and responsible for the cleanliness of the TDR, main kitchen, all BOH areas in the restaurant venues, and common hall areas.


  • Communicate effectively both verbally and in writing to provide clear direction to staff. Assign and instruct subordinates in details of work.
  • Observe performance and develop detail plans for improvement. Administering recognition for good performance.
  • Maintain sanitation levels by directing shift stewards for specific jobs.
  • Insure “Wet Floor” signs and other markers are used.
  • Make sure kitchen workers have and use the proper equipment necessary for the job (gloves, goggles, chemicals, etc.).
  • Insure that all equipment functions properly.
  • Circulate through all kitchen areas to insure team members job performance an/or correct problems situations.
  • Serve as a role model for the Sanitation Department. Always conduct oneself in a manner that reflects a positive professional image.
  • Assist in training all kitchen workers in all aspects of safety.
  • Train kitchen personnel on proper chemical usage and safety applications.
  • Maintain the levels and standards of cleanliness and safety set by Ameristar Casino St. Charles and the Health Department.
  • Delegate duties and communicate with chef, special projects and/or area concerns.
  • Ability to grasp, bend, lift and/or carry, or otherwise, move or push goods on a cart weighing a maximum of 50 lbs on occasion.






Required Knowledge and Skills


  • Flexible to work any day or shift.
  • Familiar with the handling of cleaning chemicals and compounds: familiar with cleaning of all types of kitchen equipment.
  • The understanding of labor budgets and financial statements.
  • Ability to successfully complete the Serve Safe training class.


Required Natural Behaviors


  • Ability to take a leadership role and work in a fast paced environment.


Required Education and Work Experience


  • One (1) years kitchen cleaning experience as a steward.
